⅓ cup hot water
1 cup all-purpose flour
Cornstarch, for dusting
1 cup Dashi Stock
3 tablespoons soy sauce
3 tablespoons mirin
½ teaspoon sugar
Combine the salt with the hot water and let it sit for several minutes to dissolve.
Sift the flour into a large bowl and pour the salt water in gradually, kneading the mixture with your hands to create a cohesive dough.
Form the dough into a ball and place it in the center of a plastic gallon freezer bag, not sealed, then place that bag inside another gallon freezer bag in the opposite direction, also not sealed.
Lay the bags on an uncarpeted floor and knead the dough with your socked or bare feet.
Don't stomp but shift your weight back and forth to work the surface of the dough ("one, two, udon, udon").
