Vampires, to me, behave like normal people until they need to feed. They go stir crazy when they haven't fed in a while and also get a hazy red tint to their vision until the thirst is satiated.
They still don't have reflections in mirrors, silver is dangerous to them, they began to smoke and die on holy ground, and they must be invited into a house by the owner before they can enter (welcome mats get around this problem though)
Mine do normally wear cloaks so that they can walk in the sunlight, my main character was a vampire for a point for this, but they don't freak out unless something dangerous to them is near.
Garlic starts to give them a coughing fit which goes away when they get far enough away.
Most vampires don't drain a body completely when they feed, but also keep blood in a cellar, sort of like a wine cellar, so that they can feed themselves and their fledglings, which they are obligated to do. Also, turning someone into a vampire is different than draining; Draining only extends the fangs (they grow when the vampire has need of them) to about two and a half inches, turning extends the fangs to about an inch at most.
Last thing is a time when vampires become complete monsters. When the blood moon rises, all vampires must hunt through the night or basically die when the sun rises on the next day. Their powers are strengthened but their mind becomes clouded which leads to a brutal, almost feral feeding habit for this night. They return back to their lair/home before the sun rises and won't need to feed for up to two months for a fledgling, or almost a year for a full vampire.

Mind you, my world is a fantasy world with modern/futuristic tech
